Apple Pie

What is your favorite way to make apple pie? Do you use raw apples or cooked? My family loves apple pie especially in the fall when the new crop comes in. I usually use raw apples and put all the sugar and seasonings on top of the apples before I put the top crust on. How do you do it?

I use raw apples. I've never heard of people using cooked apples, unless they cheat and use the canned pie filling. I slice up all the apples and then mix in sugar, cinnamon, nutmeg, and a dash of ginger. When all the apples are coated, then I fill the pie shell and top with either another crust or a crumb topping made with flour, brown sugar and butter.
