Bacon wrapped Jalapeno Popper stuffed chicken

I found this recipe flipping through Pinterest this morning and I had to mark it for when we get to move back home and I have a kitchen again. I think this sounds delicious!

Ingredients

  • 4 small chicken breasts, pounded thin
  • salt and pepper to taste
  • 4 jalapenos, diced
  • 4 ounces cream cheese, room temperature
  • 1 cup cheddar cheese, shredded
  • 8 slices bacon

Directions

  1. Lay the chicken flat, season both sides with salt and pepper, place 1/4 of the mixture of the jalapenos, cream cheese and cheddar on the chicken and roll them up.
  2. Wrap each chicken breast up in 2 slices of bacon and place them in a baking dish.
  3. Bake in a pre-heated 400F oven until cooked, about 25-35 minutes.

This sounds interesting, but I am assuming you would either need to buy thinly sliced chicken breasts or butterfly them yourself and pound them thin before attempting this since most grocery store chicken breasts are so huge these days.

One thing I like about this in particular is that the chicken can hold up to the bacon being wrapped around it. One of the problems I run into when simply making cheese stuffed jalapenos with bacon wrapped around them is, depending on how tight you wrap the bacon, it's hard to account for how much it will shrink and constrict. If you wrap the jalapenos too tightly, the bacon will squeeze all the cheese filling out of them as they cook.

Ohio Tom, have you ever tried using thick cut bacon? When I make bacon wrapped/cheese stuffed jalapenos I use thick cut bacon, wrap loosely, and secure with a toothpick. Never have problems with the cheese filling coming back out that way. ;)

I'm keen to give this a shot, probably with a chicken stock jello with cracked pepper in it.
It would be something id have to make home alone otherwise no one would eat it.
