Chicken Parmesan wrap

This is a pretty quick and tasty lunch recipe that I ran across. I always have chicken, pasta sauce, and tortillas in the fridge so the main ingredients are always here.

Take 1 cooked chicken breast, cut into strips, 1/4 cup marinara or spaghetti sauce, 1/8 cup shredded mozzarella cheese, 1/8 cup parmesan cheese, 1/8 tsp Italian spice blend and mix it together. Then put it in 1 large low carb or whole grain wrap. I like to add spinach to mine too!

We just recently started buying low carb wraps instead of loaf bread, so this is a good find... Especially since I have been craving chicken parmesan!

Sound wonderful. I'll have to substitute a white sauce for the marinara or spaghetti sauce. My tummy is very sensitive to those kinds of tomato products. I'll bet it will still be good though. I'll let you know.

I gave it a try last night as we didn't have anything special planned for dinner. It was wonderful. I used a 3 cheese Alfredo Sauce and it was very tasty. I also warmed the sauce a little before putting it in the wrap. Thanks for the recipe.

Costco/Sam's Club have really good low carb wraps, they are made by the Santa Fe Tortilla Company and come in a large brown box. There are a lot in one box, but I usually go through them pretty quickly. The thing I like about them in particular is that although they are low carb, they don't fall apart on you and in addition, the flavor is very neutral so it doesn't overpower what you put in them.

I've found the whole wheat ones dry out very fast and start to crumble when you try and roll them up. And many of them have a strong nutty & sweet flavor to them which doesn't always go well with the fillings.

You could also brush the exterior of the burrito with a little olive oil, and throw it on a panini grill to give it some grill marks, and melt the cheeses inside.

I like the panini grill idea. I love warm wraps! I almost always have all of these items on hand too. This would be an easy lunch to take to the office too. We have a George Foreman grill in our break room.

I was just sitting here trying to think of what would be good for lunch, and it looks like I have found a winner! I don't have any low carb wraps, but I do have some tortillas around here. :)
