Citrus Roast Chicken

This is a Mexican-style roast chicken recipe.

Make a paste with garlic (as many cloves as you like), soaked Mexican chillies like ancho or guajillo, 1 teaspoon of cumin, 1 teaspoon of ground cinnamon, a handful of dried oregano, the juice of an orange and the juice of a lime.

Rub the paste all of the chicken and you can cut incisions in the meat for the marinade to penetrate. Stuff the chicken with an onion and the leftover orange and lime.

I have used citrus and onion wedges along with herbs to stuff the cavity. The I just used diced garlic, herbs and butter for the out side rub. It is a great way to make an extremely moist chicken. I'll have to give your paste recipe a try the next time I roast a whole chicken. It sounds like it will have a really good flavor. Nice share, thanks!

Wow, both of these recipes sound great. It is so much cheaper to make my own roasted chicken that buy are premade roasted chicken.

I thought this was going to be the same old lemon chicken recipe that has been around forever. But this is a fresh take, for sure. I am not sure if it would be too spicy. How spicy are ancho chilies?

The ancho chillies are one of the milder chillies. They have a deep smoky flavor with a hint of chocolate. Ancho chillies are used for their flavor rather than heat so you shouldn't have a problem using ancho. The soaked ancho chilli is essential in this recipe, it adds lots of flavor.

Oh, okay, thanks for explaining that for me. Your description actually sounds very appetizing. I love the idea of orange and lime juice combined in this recipe, too.
