Braai Fruity Chicken

Nec timeo, nec sperno
  • 2 medium chickens
  • 6 ripe peaches split and stoned
  • 6 ripe apricots split and stoned
Brandy-Lemon Marinade
  • 1/2 cup butter melted
  • 3 tablespoons lemon juice
  • 3 tablespoons brandy
  • 2 tablespoons brown sugar
Mix together the ingredients for the marinade and soak the peaches and apricots in it for about 1 hour.
Drain the fruit and place it in a drip pan.
Split the chickens by cutting them along the breast bones and place them on a grid over the fire with the drip pan directly beneath the meat.
Braai the chickens over moderate coals for about 40 minutes, basting them frequently with the marinade.
Stir together the meat juices and fruit in the drip pan and serve this hot with the chicken.

I've never had 'fruity' chicken before but this recipe sounds really good. Thanks for posting it and I am going to give it a try. I especially love apricots and peaches!

This does sound really good! I am not a fan of apricots but I would be willing to give them a try in this recipe. Does the chicken have a fruity taste?

When I saw the title of this thread, I was reminded of the orange chicken that I tasted at a party a couple of weeks ago. The orange chicken was good, but your fruity chicken recipe sounds better! :)
