Braai Lemon Chicken Halves

• 2 small chickens

Lemon Baste

• 1/2 cup butter
• 2 tablespoons lemon juice
• 2 teaspoons grated lemon rind
• 1 clove garlic crushed
• freshly ground white pepper to taste

Split the chickens by cutting them along the breast bones.
Mix together the ingredients for the lemon baste and brush some over the chicken.
Braai the chicken halves over moderate coals for about 40 minutes turning and basting them frequently.

Yeah, sounds really good. I like how this recipe takes a traditional idea and pumps it up a notch. The lemon rind and white pepper are great twists, if you will, to a classic chicken flavor profile.

I like that recipe. It sounds really tasty and really simple. I've been on a crazy kick lately, spending a lot of time cooking, and while I've enjoyed it, I want to scale back and do some simpler things for awhile.
