Grilled Sante Fe chicken packets

I made this last night for the first time and it was so delicious. You take 4 boneless skinless chicken breasts (about 5 ounces each) and put them each on a piece of aluminum foil sprayed with Pam. Then in a bowl mix 1 small can of black beans (drained and rinsed), 1 small package of frozen whole kernel corn, and 1 small can of diced tomatoes with green chilies (drained). Top each piece of chicken with 1/4 of the bean mixture. Wrap up the foil packets and toss them on the grill for 25 minutes or until chicken is cooked through. Then open each pouch and top each with 1/8 cup of Mexican blend cheese. Reseal the pouches and let sit for approximately 2 minutes or until cheese melts.

I served this with a side of long grain rice but it would have been enough on it's own.

That sounds like a great and easy way to make chicken! It is not what I was expecting when I read the post title at all. I love Mexican food and this is just a great way to throw everything thing together and then just kick back and relax wile it cooks. This is definately something we will have to make very soon. Thanks for the share!

I love pretty much anything with Santa Fe or Tex Mex before it, lol. These sound really good, but no seasoning on anything? Or was that just a given? This sounds like it would be great for camping too if you've got access to a grill.
