Warm potato salad



I saw this recipe on a magazine website. You cut potatoes in wedges (like a large fry), toss with oil and place in an aluminum foil packet. Grill for 15 minutes then open package and place wedges directly on the grill for another 5 to 10 minutes until potatoes have grill marks. Whisk 1/4 cup of Mayonnaise with 1/4 cup of plain yogurt, 1/2 Tabasco sauce and salt together in a large bowl. Mix grilled potatoes with into dressing until covered.


Interesting, I don't think I've ever had a warm potato salad that was mayo based, only something such as a German potato salad, which could be served hot or cold. I do vaguely recall though seeing some southern recipes for Potato Salad which looked more like a pile of mashed potatoes, but they were yellow from the hard boiled eggs being completely blended in, and presumably some mustard.

I wonder why these warm recipes prefer to leave out the celery and onion - seems like the soft and crunchy contrast would be sort of nice.
