My wife and I have recently gotten into vegetarian cuisine. It’s very healthy, and most of the dishes are easy to make. Because of that, our parties naturally contain more vegetarian recipes. Not only do we like them, but our guests also fall in love with the vegetarian food we serve.

That’s why today, I want to share with you some of the best vegetarian recipes I know. Thanks to them, you will eat healthier, and you will surprise your friends with something delicious that they have never tried.

Baked camembert

Baked camembert is a must-have for every outdoor party, but it’s also a great addition to a romantic dinner. The heated cheese is poured inside, and on the outside, it has a warm and hard crust that will not resist for too long. I like to add some cranberry sauce and walnuts. Cranberry sauce is a perfect addition because it gives extra sweetness and lightness, while the nuts add some salty flavor. Five minutes is enough to prepare this delicious and elegant dish, and you don’t need to have any cooking skills to make it.

I have never met anyone who wouldn’t like it. Like no other, Greek salad can be served as a separate dish, not only as an addition. Thanks to feta cheese, it is much more filling than typical salads consisting of only veggies, so it can provide energy for many hours to come. Tomatoes, green cucumbers, feta, onions, black olives, and olive oil are the best base for preparing Greek salad. After you cut all of your veggies, the whole preparation shouldn’t take more than a few minutes.

Bruschetta with tomato and basil

It's a typical Italian appetizer consisting of toasted garlic bread with olive oil and tomatoes with basil. In the classic version, it is served with diced tomatoes and basil or onion. You can usually use it as an addition. However, I know from experience that it is hard to stop eating it, so prepare enough for your guests. I recommend using Ciabatta since it gives you the crispiest taste. Also, make sure to use fresh tomatoes and basil to get the most out of it.

Grilled veggie skewers

Veggie Skewers

It's a simple yet delicious dish that should appear on every vegetarian backyard BBQ plate. You can use different vegetables to make veggie skewers. I like the skewers with red and yellow pepper, zucchini, onions, and mushrooms. You can rub them with olive oil, but if you want them to be spectacular, try to use the best bbq rubs and spices for grilling. It doesn’t take long to grill them, so don’t forget to turn them over. Otherwise, they can easily burn.

Hummus

Many people think that to make hummus a lot of skills and time are required. However, it is not true. It doesn’t take much time at all, and anyone can do it! Put it in a bowl, pour over the extra virgin olive oil, sprinkle with fresh ground pepper, powdered papers, and chopped parsley. You can also add a few green olives, a pan-fried chopped chili, and garlic. Eat it with pita or different kinds of bread. I recommend you grill your bread first to make it crispy. It’s a perfect addition to every vegetarian BBQ.

Grilled sweet potato fries

This grilled sweet potato fries recipe has recently taken over our backyard BBQ meetings. You can make them using different spices and herbs or even into a dessert by sprinkling them with cinnamon and sugar. I usually pour a little bit of olive oil, and I add salt, paprika, pepper, garlic powder, and oregano. To make them even tastier, prepare your favorite dip. You can use BBQ or yogurt dip, it’s totally up to you. Remember to get to them right off the grill when they’re still hot and crispy.

Grilled eggplant

I love all grilled veggies. However, if I have to choose my favorite, it would be grilled eggplant. It’s extremely healthy and easy to make. I usually prepare a mix of my favorite spices and rub it to get the best taste. Eggplant needs a moment to get ready, so be patient. Just turn it over from time to time and wait. I like to eat it, just like sweet potato fries with some extra dip. With eggplant, however, I usually stick to a yogurt-based one. You can also add some fresh parsley at the end.

Veggie burger

I must admit that I cannot resist a good veggie burger. I won’t say it tastes the same, but it's equally tasty as a regular burger. You can use various veggies to make the patty. Chickpea, beans, or carrot patties are very simple but graceful and delicious ingredients. You can even mix all of them if you like. Choose your favorite bun, toppings, sauces, and enjoy your healthy burger. Sweet potato fries are an amazing addition to this dish.

Vegeterian spring rolls

Rice paper costs little, but it will allow you to turn a simple composition of vegetables, sprouts, pods, and other fresh ingredients into a delicious and easy-to-cook-dish. Spring rolls are an excellent choice for a casual meeting with friends, where everyone prepares them from their favorite ingredients prepared in advance. They are also a great and light alternative to sandwiches and salads at work. They are low in calories but high in fiber, vitamins, and minerals.

Grilled halloumi cheese

Another cheese on this list that is perfect for a backyard get-together, and unlike camembert, it doesn't melt. Grilled halloumi cheese is a delicious snack, suitable for any occasion. Baked cheese drizzled with olive oil and lemon juice or pomegranate syrup can be served as a separate dish or as an addition to meat and vegetables. Halloumi is also a very tasty ingredient in salads and burgers, in which it is often treated as a meat substitute.

Grilled corn on the cob

Grilled corn is best with butter. However, if you follow a vegan diet, you can use olive oil or margarine. Grilled corn only needs to be seasoned with salt, but if you want, you can also add other spices to it, such as fresh herbs or garlic. From my experience, that dish is something that even the biggest fans of meat enjoy having for a vegetarian BBQ. Even kids love this one!

Grilled potatoes

Grilled potatoes are a delicious side that's usually served with other grilled dishes. They are amazing, for example, with the addition of yogurt sauce or aioli. If you want to take your grilled potatoes to another level, try adding some cottage cheese on top of them. With the addition of fresh parsley and salt, this simple dish becomes something extraordinary. Gobble these up while they're still crispy!

Grilled stuffed peppers

A few pods of red pepper filled with couscous are a proposal for a party in the garden or a home summer dinner in half an hour. The stuffing is made of couscous, garlic pressed through a press, stewed tomatoes with onion, and Parmesan cheese. Drizzle stuffed peppers with olive oil and grill wrapped in aluminum foil for 30 minutes. This delicious dish is not only healthy, but it will keep you feel for hours.

Grilled stuffed mushrooms

Another great stuffed vegetable that tastes amazing and is the perfect appetizer for parties. Grilled mushrooms are the perfect way to prepare an easy and meatless dish. You can choose your ingredients, but I recommend using a simple stuffing of yellow cheese, peppers, and sun-dried tomatoes. You can use them as an addition to other dishes, but they are also perfect as a main dish. Be sure to find fresh and big enough mushrooms.

Grilled asparagus

Grilled asparagus is always a side dish at gatherings with my family and friends. Accompanied by grilled potatoes, peppers, zucchini, or eggplant, asparagus looks and composes perfectly. Both white and green asparagus are suitable for the grill. Grilled asparagus comes out crispy and super tasty. It is one of the recipes that is prepared and made quickly. You can also wrap them in zucchini, or add garlic and parmesan to get the extra flavor.

Grilled fruit

Served with a scoop of ice cream or shortbread cookies, grilled fruit is an amazing alternative dessert. The fruit for the grill should be ripe, but also quite firm. Fruits such as pineapple, banana, pear, apple, or strawberry will work great. When preparing, remember to turn them over from time to time, otherwise, they can burn quickly, because they contain sugar. Larger fruit can be grilled on the wire rack without a tray or foil.

Grilled tofu

I always have grilled tofu on my table during the summer season. The previously prepared tofu marinade makes it exceptionally tasty and aromatic. Grilling tofu is great for sandwiches, salads, pasta, or rice. It has a characteristic smoky flavor. It’s a protein meal for vegetarians, vegans, and anyone who likes it! Soak it in the marinate at least 24 hours before cooking and leave it in the fridge for better taste.

Guacamole

Guacamole is one of the most famous Mexican salsas. It is the perfect addition to nachos, tacos, quesadillas, and other Mexican delicacies. The most important ingredient in guacamole is, of course, the avocado. We buy a Hass avocado, which is creamier and tastier than other avocado varieties. First, avocados must be properly ripe. If the avocado is hard and unripe, the guacamole will not be tasty and aromatic. You can add tomatoes, onion, coriander, lemon juice, salt, and pepper for a better taste.

Veggie wraps

Vegetarian wraps are prepared by rolling your favorite additions into your choice of tortilla. The best part is, you can put anything you want inside! My favorite includes spinach, zucchini, and pepper, a spread of hummus, a drizzle of olive oil, and a dash of fresh basil. I recommend grilling it, especially if there is cheese, to get a crispy tortilla. If you do not have tortillas and still want to make a wrap, you can use iceberg lettuce leaves as an alternative.

Grilled veggie sandwich

These easy-to-make grilled veggie sandwiches can be made a hundred different ways, and they all catch my eye! Spicy, sweet, or salty; it all depends on your imagination. You can use different types of bread, veggies, salsas, and toppings. They’re perfect for children, but I guarantee that the adults will want to try them too. Put everything on the table, and let everyone choose their favorite ingredients that they want to have inside.

Who's Hungry?

Vegetarian food doesn’t have to be boring. On the contrary, there are many fun and tasty recipes out there. They’re very healthy, and most of them don’t require a lot of cooking skills. You can also make various vegetarian recipes from different ingredients than vegetables, such as halloumi cheese or tofu. The sky's the limit!

We made sure to put varied ideas so anyone can find something tasty for themselves. My favorites are guacamole, veggie burgers, and grilled halloumi, and if you have never tried them before, now it’s the perfect moment to change this.
